Cheezious Chicken Fajita Pizza Recipe

Ingredients (12-inch pizza)

For the Pizza Dough (makes 1 large pizza)

  • All-purpose flour – 2 cups
  • Instant yeast – 1 tsp
  • Sugar – 1 tsp
  • Salt – ½ tsp
  • Olive oil – 2 tbsp
  • Warm water – ¾ cup

For the Fajita Chicken

  • Boneless chicken breast – 200g (cut into strips)
  • Olive oil – 1 tbsp
  • Lemon juice – 1 tbsp
  • Red chili powder – 1 tsp
  • Paprika – 1 tsp
  • Garlic powder – ½ tsp
  • Cumin powder – ½ tsp
  • Salt – ½ tsp
  • Black pepper – ¼ tsp

For Toppings

  • Pizza sauce – 4 tbsp (or Cheezious-style tangy tomato sauce)
  • Mozzarella cheese – 1 cup (shredded)
  • Cheddar cheese – ½ cup (shredded)
  • Green bell pepper – ½ (sliced)
  • Red bell pepper – ½ (sliced)
  • Onion – ½ (sliced)
  • Black olives – 2 tbsp (optional)
  • Jalapeños – 1 tbsp (optional)

Instructions

1. Prepare the Dough

  1. In a bowl, mix yeast, sugar, and warm water. Let it sit for 10 minutes until frothy.
  2. Add flour, salt, and olive oil. Knead until smooth and elastic (8–10 minutes).
  3. Cover and let it rise for 1 hour or until doubled in size.

2. Cook the Fajita Chicken

  1. In a bowl, mix olive oil, lemon juice, chili powder, paprika, garlic powder, cumin, salt, and black pepper.
  2. Add chicken strips, coat well, and marinate for 20 minutes.
  3. Pan-fry on medium heat for 5–6 minutes until fully cooked.

3. Assemble the Pizza

  1. Preheat oven to 220°C (425°F).
  2. Roll out the dough to a 12-inch circle. Place on a greased baking tray or pizza stone.
  3. Spread pizza sauce evenly.
  4. Add a light layer of mozzarella.
  5. Arrange cooked fajita chicken, peppers, onions, olives, and jalapeños.
  6. Top with remaining mozzarella and cheddar cheese.

4. Bake

  • Bake for 12–15 minutes or until crust is golden and cheese is bubbly.

5. Serve

  • Slice hot and serve with Cheezious-style garlic mayo dip or chili sauce.
